Native to Greece and Italy, but now found all over the world, fenugreek is a slender herb plant that is a member of the pea family. Fenugreek seeds are hard (but retain potency well), so they are typically lightly toasted, then ground before using. They have an aroma and flavor similar (but sharper) to maple syrup. Once ground, fenugreek is common for use as a pickling spice, in curries, tea, and sometimes candies.
